The diagram illustrates the structure of a traditional smokehouse used in making smoked foods.
Overall, it is clear that the smokehouse consists of two main parts: an underground system of pits and a chamber placed above the ground. Food such as meat, poultry and fish are smoked in this box-shaped chamber, not directly over fire but by being exposed to smoke produced in the underground part.
The first part of the smokehouse comprises two pits connected to each other. The first pit is empty and covered with a half-open lid to let fresh air flow through it to the other. The temperature of the smokehouse can be controlled through the air intake allowed in this first pit.
The second pit or the fire pit, however, is completely closed with a lid. Logs are burned inside it to generate smoke that is then transported to the smoking chamber above the ground through a metal pipe. Different kinds of meat and fish are hung in this enclosed chamber and are slowly smoked until they achieve the desired texture and flavors.
